Wonderful stuff, I love it. Hate plaster board though, messy awful to work with. Give me enough 1/2 " plywood and I'll build you just about anything. I've often thought a life size Pyramid built from Plywood would be super kewl.
I work with these materials all the time. Do you know your grades - A B C D - X and their conventional uses? Also Luan, solid core hardwood, MDO, and particle board. I personally never use particle board.

A is the smoothest and is a paintable or sometimes stainable surface.
D is the coarsest with knots and such.
X is for exterior usage like 1/2" CDX which is used as underlayment on roofs.
B is less smooth than A etc.
Usualy the smoothest side of the plywood is the side that goes up or is the surface that something else goes on.
Luan is made from mahogany, its good if you need 1/4" material. MDO medium density overlay often used as a smooth finished surface, its paintable.
There's also stuff like AC 3/4" tongue and groove underlayment which often gets used under tiled floors.
