The 'health food' movement began earnestly in the late 60s and into the 70s. I was involved in that I worked as a manager of a food co-op back in the 70s. Jump ahead 40 years and we see companies like McDonald's, Subways, and Taco Bell doing away with artificial ingredients. 40 years, that's how long this has taken. Let's hope the movement to get away from CO2 emissions can get done sooner. We don't have time to waste.

I help found two Food Coops in the early and mid-70's.
Excellent, that's good work. The one up here is thriving.
The hippies knew that hydrogenated oils were bad for you. Thirty years later it was a news flash.
Don't forget civil rights, women's movement, and stopping a war if I remember right. Radio was changed, music was changed, gay rights, healthcare for the elderly, child care for working mothers and students, anti nuke, peace activism, the health food movement, and, and, and.
I like the way a lot of the understandings from that time are developing further. We have even more nuanced info about food, politics, all of it. The information is available, doesn't mean it's getting looked at or absorbed, but it is there.
